I've made these twice now and I plan to make them again. Lydia eats them and they fill her tummy right up. They make a easy and fairly quick lunch and it is something other than the usual.
I bought Japanese Sticky rice. (I bought the brand NISHIKI, I found it at Smiths in the Asian section.) I cooked it according to the directions. Then I lay some plastic wrap over little bowls. I filled them with the cooked hot rice. Then I made a little crater using a spoon. I added some chicken or whatever filling you choose and then I added some more rice on to of the chicken. I wrapped it up with plastic. Then I formed them into balls, pressing lightly with my hands and finally I let them cool for a minute more before serving it to the children.
Lydia picks it right up and eats it with her hands. I think this is the best way.
Owen doesn't like to get messy or touch things that are potentially sticky so he ate his like a puppy dog.
I suppose you could always use some utensils to eat them but where would the fun be in that.
