Our power was scheduled to be shut off yesterday from 10 a.m. to 4 p.m. I forgot about this and had planned to finish sewing for a Young W omens project for the majority of my day. (more on that later) When I realized that wasn't happening with no electricity instead I devoted a few hours of my day to the garden and weeding the flower beds.
The garden is looking good!
The peas are coming along.
The baby spinach was ready to be picked.
Spaghetti Squash.
I asked Lydia to put on some 'work' clothes that she didn't mind getting dirty. We came up with this outfit. She later told me, "Mom, I told feel like myself." I agreed. She NEVER wears jeans. She owns a few pairs, but she is in dresses or skirts 99.9% of the time. I suggested she change when we were through and after did did she exclaimed that she felt like herself again. Ha ha.
We cut, washed and dried A LOT of spinach!
We love spinach.
We use it in green smoothies,
spaghetti sauce,
omelettes,
salads, in sandwiches and more!
I also planted some Kale. I have never tried to grow it before now.
This is my latest favorite simple green smoothie recipe:
1/2 frozen banana
1 Tbsp Peanut butter
1/2 Tbsp flax seed
1/2 cup almond milk
4 -5 ice cubes
2 cups of fresh spinach
It like it for breakfast or occasionally Lydia and I will split one for an afternoon snack.
